At Yamato, craftsmanship begins with the people preparing your food. Our chefs have spent years refining their technique, from the precision of slicing fish to the timing and control required at the Japanese steakhouse grill. Every dish is approached with consistency, attention to detail, and respect for the ingredient.

旬| Seasonality

Shun

Our approach to sushi begins with the fish itself. Fresh seafood arrives multiple times each week, with select varieties flown in as often as three times a week. Certain seasonal fish are sourced directly from Japan, including catches selected from specific prefectures known for the quality and seasonality of their waters. When availability allows, fish landed in Japan can be shipped overnight and presented at Yamato the following day. Other species are sourced from carefully selected waters around the world, allowing our chefs to choose each fish according to where and when it is at its best.

Kodawari

At the sushi bar, every cut is deliberate. Temperature, texture, aging, seasoning, and balance are considered before the fish reaches the plate. Our philosophy is not simply to offer the widest selection, but to serve each fish in the condition, season, and preparation that allows its natural character to be fully appreciated.

At our Japanese steakhouse tables, that same attention to craft takes a different form. Premium steak, seafood, vegetables, and rice are prepared directly before our guests on the teppan, the heated iron grill at the center of the experience. High heat, precise timing, knife work, and technique come together with the energy and interaction that define Japanese steakhouse dining.
